Green Asparagus Veloute
(for 10months and up)
Grocery List
1 dozen thin green asparagus spears
½ green onion
3 spinach leaves
Here we go!
Stem the spinach leaves. Thoroughly wash the leaves in several rounds of cool water. Set aside. Remove the green onion's outer layer. Cut the onion in half and thinly slice the half to be used. Set aside. Gently wash the asparagus one by one. Cut off the hard, dirty end (3/4 inch) and throw them away. Remove their small "leaves" with a paring knife. Cut the asparagus into thin slices. Place them, along with the green onion, into the steamer basket and cook for 15 minutes (water level 3). Put the cooking juices into a bowl.
Place the cooked asparagus and onions, plus the raw spinach leaves, in the blending bowl.
Blend, adding a small amount of cooking juices between each pulse, depending on the desired consistency. Pulse once for a puree with a few asparagus chunks; twice for a more homogenous consistency; or three times for a veloute that will be perfect if you strain it through a Chinois and salt to taste (if necessary).
Pour into a bowl and decorate with a thin drizzle of olive oil.

The"secret'' of the Cocoonababy® nest can be found in the posture adopted by the child when placed in the nest. This posture presents several advantages for newborns.
